– Discovering the fifth taste –




Part 1
1 Humans use their senses (sight, hearing, smell, touch, and taste) to enjoy food.
Among them, the sense of taste is the most important in telling how delicious a food
is. There used to be only four known tastes: sweet, sour, salty, and bitter, but a new
taste was found. This new taste is called “umami.” It can be found in many foods
such as fish, shellfish, cured meats, mushrooms, vegetables, green tea, and
fermented foods.
2 Many of the main foods used in traditional cooking have umami. In Asia, beans,
grains, fermented foods, shiitake mushrooms, kombu seaweed, and dried seafood
were all found to have umami. In Western culture umami can be found in tomatoes,
and fermented or cured foods such as ham and cheese.




Part 2
3 Umami was discovered in 1908 by Ikeda Kikunae. He experimented with
kombu dashi. He found glutamate, a type of amino acid, in the kombu dashi. He
also found that glutamate had a unique taste, and he named it umami.
4 Ikeda then created monosodium glutamate, or MSG. It was first made in 1909.
MSG is used to add an umami taste to food, like we use sugar to make things taste
sweet. MSG is now used in many foods in fast food restaurants and supermarkets.
MSG is easy to use, cheap, and has a strong umami taste.




5 Later, umami substances other than glutamate were discovered: inosinate by
Kodama Shintaro in 1913, and guanylate by Kuninaka Akira in 1957. Both are
added to foods like instant noodles and potato chips. After those substances were
discovered, many people tried to find out if umami was a true taste and if it should
be considered the fifth taste.

6 That changed in 2000. Researchers at the University of Miami discovered the
taste receptor for umami. They found that the purpose of these receptors is to taste
glutamate. Because of this, they showed that umami is a true taste.
7 For home cooks, learning how to use umami can help them make delicious foods.
A lot of umami products can be found in your kitchen. Parmesan cheese or other
types of aged cheese, soy sauce, tomato products such as juice or ketchup, and
fish-based sauces such as Worcestershire sauce are the examples of umami products.




A study found that babies eat more soup if it has a little glutamate. Therefore,
some doctors suggest that parents use umami to help babies eat more when they
don’t eat much. Using umami also helps babies start eating healthy foods.
Part 4
8 Using umami could also be a good way to improve the health of people. For
example, you can eat less salt by using umami. Eating foods with a lot of salt can
result in high blood pressure. Most people today use too much salt. While umami
cannot be used instead of salt for flavor, people tend to like umami foods better than
salty foods. A study in Japan and the US showed that people enjoy food better by
adding glutamate even though the food has less salt.




9 Since traditional Japanese food known as washoku was added to UNESCO’s
Intangible Cultural Heritage List, chefs all over the world have become interested in
how umami is used in Japanese food. Murata Yoshihiro, one of the most famous
Japanese chefs, says, “A lot of young chefs around the world are studying Japanese
food very hard and using umami. What I want to do is to contribute to worldwide
health by promoting the culture of Japanese food.”




Lesson 5 うま味 ~5つ目の味の発見~

1 人間は,食べ物を楽しむのに五感(視覚,聴覚,嗅覚,触覚,味覚)を利用する。
その中でも,食べ物がいかにおいしいかを伝える上で,味覚は最も重要だ。かつては甘
味,酸味,塩味,苦味の4つの味しか知られていなかったが,新しい味が発見された。
この新しい味は「うま味」と呼ばれている。それは,魚,貝,加工肉,キノコ,野菜,
緑茶,そして発酵食品といった,多くの食べ物に見られる。




2 伝統的な料理に使われる主要な食べ物の多くは,うま味を含んでいる。アジアでは,
豆,穀物,発酵食品,椎茸,昆布,乾燥した魚介類にすべてうま味が含まれていること
がわかった。欧米文化においては,うま味はトマトや,ハムやチーズといった発酵食品
や加工食品の中で見つかる。

3 うま味は,1908 年に池田菊苗によって発見された。彼は昆布だしを使って実験を行
った。彼は昆布だしの中に,グルタミン酸というアミノ酸の一種を発見した。彼はまた,
グルタミン酸には特有の味があることを見つけ,それをうま味と名づけた。
4 それから池田は,グルタミン酸ナトリウム,すなわち MSG を作った。それは 1909 年

グルタミン酸が含まれていれば,赤ん坊はそれをより多く飲むことがわかった。そのた

8 うま味を使うことはまた,人々の健康を改善するためのよい方法にもなるかもしれ
ない。例えば,うま味を使って,食べる塩分の量を減らすことができる。塩分を多く含
んだ食品を食べることは,高血圧につながりかねない。現代のほとんどの人々は,あま
りにも多くの塩分を使いすぎている。うま味は,風味に関しては塩の代わりには使えな
いが,一方で,人々は塩分の多い食品よりも,うま味食品のほうを好む傾向にある。日
本とアメリカのある研究によると,たとえ食品に塩分があまり含まれていなくても,グ
ルタミン酸を加えることで,人々はその食品をより楽しめるようだ。




9 「和食」として知られている伝統的な日本食が,ユネスコの無形文化遺産の一覧に
加えられて以来,世界中のシェフが,うま味が日本食でどのように用いられているかに
興味を持つようになってきている。最も有名な日本人シェフの1人である村田吉弘さん
は次のように言う。「世界中の多くの若いシェフが,日本食をとても熱心に研究しなが
らうま味を使っています。私がやりたいことは,日本食の文化を売り込むことによって,
世界中の健康に貢献することです。」
